My dad came up with this recipe as a quick fix for when we needed sauce but didn’t want to wait all day for the gravy to cook. This recipe has been a staple in our household ever since, because it is both easy to make and delicious to eat.

Ingredients
- 1 large yellow onion, diced
- 3 cloves of garlic, minced (I like to use a couple more for extra flavor)
- 2-3 Tbsp. of olive oil
- 2 cans of crushed tomatoes (24 oz each)
- 1 Tbsp Italian seasoning
- Crushed red pepper flakes to taste
- Salt & pepper to taste
- 1/4 cup of grated parmesan cheese
- 2 Tbsps of fresh basil (chopped or whole leaves)
Directions
- In a medium pot over medium heat, cover the bottom of the pot with olive oil and add in the onion, ensuring all of the onion is coated in oil.
- Stir constantly until the onion becomes translucent.
- Add the garlic in and continue to heat until the garlic becomes golden brown and fragrant.
- Pour in the cans of crushed tomatoes and the seasonings, red pepper flakes, and salt/ pepper.
- Once the sauce begins to bubble, sprinkle in the parmesan cheese and basil.
- Cover and allow to cook on simmer-low for at least 2 hours, stirring occasionally.
- Serve with your favorite pasta, use as a dipping sauce, or however else you like, and enjoy!
